This post is a little different today, I wanted to give you an idea/tip/inspiration (call it whatever you wish) to make the most of summer on a budget. I have been a busy bee in the kitchen today and whipped up this summer berry cheesecake:
This simple cheesecake serves 8 people, it is easy & cheap to make working out at only 88p per serving! It is a great light summer desert, it could be the perfect end to a BBQ feast on a sunny day or you could share it with friends with a cuppa on those good old British rainy summer days!
What You Need:
100 g digestive biscuits, or cookies, crushed into fine crumbs
50 g demerara sugar
50 g butter, melted
500 g mascarpone
100 g icing sugar
1 vanilla pod, sliced lengthways, or 1 tsp vanilla extract
200 ml double cream, lightly whipped
I used MySupermarket to find the cheapest options for this cheesecake. I shop at Tesco & these are the items I bought:
In a mixing bowl, mix together the biscuit crumbs and Demerara sugar. Add in the melted butter and mix well.
Spoon the biscuit mixture into a spring-form cake tin lined with baking paper. Use a flat bottomed glass to press the biscuit crumbs down firmly and evenly. Chill in the refrigerator until set.
In a large mixing bowl, using a whisk or a wooden spoon, beat together the cream cheese, icing sugar and vanilla pod seeds or vanilla extract until well mixed. Then fold in the double cream, mixing well.
Spoon the cream mixture over the chilled biscuit base, making sure that there are no air bubbles. Smooth the top of the cheesecake with a palette knife or metal spoon.
Chill the cheesecake in the refrigerator for 1 hour until set.
To serve, remove from the cake tin and decorate how you wish. I topped mine with a Berry Medley & sprinkled with icing sugar.
